500 g spaghetti
1 Tbsp olive oil
200 g smoked bacon
1 garlic clove
40 g parmesan + extra for serving
200 ml single cream
1In a large pan of boiling salted water, cook the spaghetti following the packet instructions. Dice the onion, slice the bacon in 0.5 mm strips and mince the garlic.
2Use a pan large enough, to have room to toss the pasta with the sauce. Sauté the onion. When it becames translucent add the bacon. When the bacon is starting to change it colour add the garlic and stir well. Cook for one minute. Set aside.
3Beat together the eggs, single cream, Parmesan and black pepper. Return the pan to the heat, add the hot spaghetti over the bacon. Add the eggs mixture and toss well until the eggs are barely set.
