Salmon with oyster sauce
1,5 lb salmon
8 slices of bacon
3/4 lb mushrooms
3 garlic cloves
3 green onions
2 tablespoons chopped Italian parsley
1/4 cup oyster sauce
1/2 cup water
2 Tablespoons butter
1Cut the salmon in 4 pieces and wrap each one with a slice of bacon. Place the salmon into a broiler proof tray and broil it for 15-20 minute, depending of thickness.
2Chop the remaining 4 slices of bacon in half inch strips. Cook the bacon. Poor off any excess fat, except for one tablespoon. In a different pot boil 1/2 cup of water.
3Chop the mushrooms and the white part from onions and crush the garlic. Add them and cook it until softened. Add some water if need it.
4Chop the green part for the onions in one inch pieces.
5Add oyster sauce mix with boiled water. If it looks too wet, keep boiling!
6Turn heat way down (low) and stir in the parsley and green onion for one minute. Add the butter until it has melted into the sauce.
7Serve it hot with fresh broiled salmon.
