Malacca Rice

Ingredients

2 eggs
8 ounces chicken meat
1 medium onion
1 tsp chopped ginger
1 big clove garlic
4 scallions
8 ounces cooked shrimp
8 ounces frozen peas
3 Tbsp light soy sauce
1 cup rice
2 Tbsp oil
salt, pepper

Preparation

Boil the rice with 3 cups of water and a little salt.

Beat the eggs and put some salt and pepper. Cook the omlet in a pan where you heat one tablespoon of oil. Roll it and cut half inch slices.

Dice the onion, crush the garlic and ginger. Heat the remaining oil and sauté the onion, garlic and ginger.

Add the scallions, green peas, soy sauce, chicken meat in half inch slices and the cooked shrimp (cut in halves or whole).

Heat well and add the cooked rice. Stir-fry for five minutes.
Rice on the platter, decorated.  Bon apetit!

Put on a platter and decorate with slices of omlet.

Tips

You can add a tablespoon of hot sauce.

The rice can be served with sweet and sour sauce.
