8 ounces chicken meat
1 medium onion
1 tsp chopped ginger
1 big clove garlic
8 ounces cooked shrimp
8 ounces frozen peas
3 Tbsp light soy sauce
1 cup rice
2 Tbsp oil
1Boil the rice with 3 cups of water and a little salt.
2Beat the eggs and put some salt and pepper. Cook the omlet in a pan where you heat one tablespoon of oil. Roll it and cut half inch slices.
3Dice the onion, crush the garlic and ginger. Heat the remaining oil and sauté the onion, garlic and ginger.
4Add the scallions, green peas, soy sauce, chicken meat in half inch slices and the cooked shrimp (cut in halves or whole).
5Heat well and add the cooked rice. Stir-fry for five minutes.
6Put on a platter and decorate with slices of omlet.
You can add a tablespoon of hot sauce.
The rice can be served with sweet and sour sauce.
