Couscous salad with vegetables and orange
1 Tbsp vegetable oil
250 g couscous
1/2 stock cube
125 g tinned peas or mange tout
1 red bell pepper
1Dice and sauté the onion in a tablespoon of oil. In the meantime, cut the bell pepper and the mange tout in strips. Peel the orange, remove all the seeds and slice it.
2Make the 250ml stock using the cube - check whether 250ml of water is the corect amount for half the cube. When the onion is done add the couscous and stir for few seconds. Add the boiling stock and cover it for 5 minutes.
3Fluff the couscous with a fork. Add the rest of the ingredients, stir to combine stuff the bell peppers and it’s ready to be served.
